Abstract

Tilapia is the second most produced fish worldwide, due to its high hardiness and nutritional quality. However, its chemical composition favors deterioration reactions, making it important to use techniques that guarantee the quality of this fish. The aim was therefore to carry out a bibliometric study of articles involving the shelf life of tilapia. The results showed that with the economic importance of tilapia, studies related to extending the shelf life of this fish have increased. The spotlight is on authors from Chinese educational and research institutions. The presence of restricted groups focused on this research is notable, indicating little collaboration between institutions at an international level. Identifying the terms most used by the authors and the evolution of conservation methods over the years was also possible. Finally, using technologies, alone or in combination, is mainly aimed at shelf life, nutritional quality, and preservation of sensory characteristics.
