Abstract

Due to the growing demand for functional foods, there is an increase in the development of new processes and products with characteristics relevant to application in the food industry, as well as for human health. This includes the production of fructooligosaccharides (FOS), a sugar considered a prebiotic. FOS can be obtained through the action of microbial fructosyltransferases (FTases). This study aimed to develop and evaluate a reaction system for the continuous production of fructooligosaccharides (FOS) in a fixed-bed reactor (PBR), catalyzed by Aspergillus oryzae IPT-301 cells immobilized on 3D-printed porous PLA supports. Transfructosylation activity was determined by sugar quantification using DNS and GOD-PAP. Enzymatic activity was monitored for 4 hours under continuous conditions, confirming stability throughout the process at a continuous flow rate of 1 mL.min-1. The cylindrical model B stood out, demonstrating its decisive role in reactor performance, directly influencing enzymatic activity. The results demonstrated the high potential for continuous FOS production using 3D-printed biocatalysts.
