GASTRONOMIC TRADITIONS IN BRAZIL: a systematic review of the literature

ABSTRACT

Gastronomy is one of the main reasons for the intensification and dynamization of the tourism sector, and is even considered to be local intangible heritage. However, the dynamization of contemporary life may be leading to the adherence of eating practices that violate this heritage. In this context, the present work focuses on the universe of Brazilian gastronomy, raising the following question: can a "Brazilian gastronomic tradition" be identified? and if so, is it being lost with contemporaneity? To find these articles, a systematic review following the PRISMA guidelines was carried out in the Web Science, SCOPUS and Google Scholar databases. From an initial quantity of 67 articles, after the exclusion process, seven scientific articles published between 2007 and 2021 were analyzed through a content analysis.We detected a difficulty in aligning scientific knowledge with popular knowledge. All the articles studied indicate a considerable loss of gastronomic traditions in contemporary Brazil and present proposals for reviving tradition and valuing the Brazilian food pattern.
