MICROBIOLOGICAL QUALITY OF GROUND BEEF SOLD AT A MUNICIPAL MARKED IN WEST OF BAHIA

Abstract

Ground beef is a product of great relevance in the market, due to its practicality and lower cost. It is considered a food favorable to contamination, as its intrinsic characteristics associated with an inadequate environment contribute to the proliferation of microorganisms. The objective of this study was to investigate the microbiological quality of ground beef sold at a municipal fair in west of Bahia. For this, samples of ground beef from different establishments were collected, which were submitted to analyzes of aerobic mesophilic, coagulase-positive staphylococci, enumeration of Escherichia coli and presence of Salmonella. At the same time, the hygienic-sanitary conditions of the commercialization sites were evaluated, in which the infrastructure and handling conditions were observed. Our data reveal counts above the acceptable limit of at least one microorganism in most of the evaluated samples. In addition, the stands presented unsatisfactory conditions in several aspects evaluated, due to the presence of non-conformities, such as flies and dust spots, besides the use of equipment in poor conservation conditions. These results demonstrate the need to adapt the chain of production and commercialization of ground beef, in order to favor greater quality of the product and reduce the risk of developing foodborne diseases.
