Abstract

The forage cactus is more nutritious than other foods, however, there is still a pre-judgment regarding its usefulness in human nutrition. Sweets are products widely consumed and accepted by the general public, and prior knowledge of the consumer profile is an important issue before the development and inclusion of a new product in the food market. Therefore, the objective of this research was to evaluate the marketing potential of creamy sweet based on cactus forage enriched with chia seeds. A questionnaire (Google Forms) was prepared with 28 questions about the profile and preferences of potential consumers, which was available online on social networks for 8 days, obtaining 371 responses. Most respondents (89.2%) responded that they do not know the nutritional benefits of forage cactus and more than 50% would perhaps consume the product. 96.50% of the participants in this survey consider the product to be innovative. The development and possible insertion of the creamy sweet based on forage cactus enriched with chia would be well accepted by consumers.
